Scientists use Oxygen Radical Absorbance Capacity (ORAC) to study the value of food to determine which are the highest in antioxidants. If a product has a high ORAC value, it has the ability to neutralize many dangerous cell-damaging free radicals. The USDA recommends a minimum intake of 3,000 to 5,000 ORAC units per day.
